The brining step is certainly the most requiring one considering the quality needed in the final product. Today, cheese producers, are highly insisting on food safety : brining is therefore a particular example.

 


In order to answer these requirements, Kaufler recently developed a very innovative brine injection process, which affords access to quantitative and qualitative control of this cheese production step : Gamax®.
